Prepare all the ingredients.

Coat the chicken with half of the vegetable oil, rub salt and pepper inside and out.
- Vegetable oil: 60 ml
- Salt: to taste
- Ground black pepper: to taste

Remove the zest from the lemons and cut it into thick strips. Cut the lemons into wedges and place them inside the chicken.
- Lemon: 2 pieces

Cut the leaves from the sage stems. Place the stems inside the chicken and add a few leaves as well.
- Sage: 20 g

Cover the chicken and let it marinate at room temperature for half an hour (or 2 hours in the refrigerator).

Heat vegetable oil and half of the butter in a large skillet or baking dish. Sear the chicken on all sides until golden brown.
- Vegetable oil: 60 ml
- Butter: 60 g

As soon as the oil starts to darken, remove the chicken and pour out the oil.

Melt the remaining butter in the same container and return the chicken there. Place garlic around the chicken.
- Butter: 60 g
- Garlic: 7 cloves

Place the remaining sage and cinnamon with the chicken, add lemon zest.
- Sage: 20 g
- Cinnamon sticks: 0.5 piece
- Lemon: 2 pieces

Pour milk into the mold.
- Milk: 570 ml

Cover the mold with a piece of baking paper soaked in water. Place in a preheated oven at 190 degrees for 1–1.5 hours.
