Wash the eggplants without peeling, dry with a towel, salt them, skewer them and grill over hot coals (without flames), turning occasionally for even cooking.
- Eggplants: 200 g

Once ready, remove the eggplants from the skewers, peel them, and place them on a dish.

When using eggplants as a side dish for kebabs, they should be cut lengthwise, filled with a piece of lamb fat, and then grilled as described above.
