Prepare the rice: add rice to a pot of boiling unsalted water, stir with a wooden spoon, and cook on high heat for 12-15 minutes until the rice is soft. Drain the rice in a large colander and rinse well under cold water. Allow the water to drain.

While the rice is cooking, prepare the other ingredients: cut the bacon into strips and the sausages into 4 pieces each. Remove the seeds from the pepper and cut it into cubes. Also, dice the onion and slice the celery thinly. Halve the olives and remove the pits.

Heat olive oil in a large skillet, add bacon and sausages, and cook, stirring, for 5-6 minutes until golden brown. Remove all the meat from the skillet with a slotted spoon and set aside. Add bell pepper, celery, and onion to the skillet and cook, stirring, for 5-8 minutes until the vegetables are soft. Add olives and return the meat to the skillet.
