Perfect Potatoes in the Oven
4 servings
60 minutes
Perfect oven-baked potatoes are a gastronomic art where simple ingredients transform into true delight. This recipe is inspired by the Japanese culinary approach that emphasizes texture and flavor balance. Potatoes coated with a delicate layer of starch become crispy on the outside and soft on the inside after baking. The aroma of garlic and rosemary adds exquisite depth to the flavor. Baked to a golden crust, they pair wonderfully with meat dishes or can be served as a standalone snack. This recipe is a harmony of simplicity and perfection, where each ingredient plays its role. In Japan, such dishes are valued for their ability to highlight the natural taste of ingredients, leaving only admiration after each bite.

1
Prepare all the ingredients. Preheat the oven to 200 degrees.

2
First, wash and cut the potatoes: large ones into wedges, medium ones in half, and very small ones can be left whole. It's important that all pieces are the same size, about a quarter of a chicken egg.
- Potato: 800 g

3
Place potatoes in salted water, bring to a boil and cook for 7 minutes until partially cooked.
- Potato: 800 g

4
Drain the water, cover the pot with potatoes and return it to the stove on the lowest heat for 5 minutes.

5
Then place the potatoes in a colander and shake a few times to coat the pieces with a layer of 'frost' starch.

6
In contrast, combine melted and olive oil.
- Melted butter: 2 tablespoons
- Olive oil: 2 tablespoons

7
Crush the garlic cloves with a knife while still in their skins and place them in a baking tray. Also add the rosemary sprigs.
- Garlic: 5 clove
- Rosemary: 2 sprigs

8
Slightly heat the baking tray, mix the contents with oil, and place the potatoes cut side up.
- Potato: 800 g

9
Put the potatoes in the oven for 30 minutes. Turn them on the baking sheet twice: after 15 minutes and then again after another 10 minutes.

10
Before serving, remove and discard the garlic and rosemary, sprinkle the potatoes with coarse salt, and serve immediately.
- Salt: to taste
