Pumpkin and Bacon Dumplings

Mix flour, egg, water, milk, 10 ml of vegetable oil, and 10 grams of salt. Knead the dough with a hook attachment.
- Wheat flour: 500 g
- Chicken egg: 1 piece
- Water: 100 ml
- Milk: 190 ml
- Vegetable oil: 30 ml
- Salt: to taste

Check the dough in 10 minutes — it should easily come off your hands. If the dough sticks to your hands, add a little more flour and knead for another 5 minutes. Wrap the finished dough in plastic wrap and let it rest in the fridge for at least 30 minutes.
- Wheat flour: 500 g

Remove the seeds from the pumpkin, cut it into large pieces without peeling, and place it on a baking sheet.
- Pumpkin: 2 kg

Sprinkle the pumpkin with rosemary leaves, coarsely chopped garlic, sugar, salt, and drizzle with oil.
- Rosemary: 2 sprigs
- Garlic: 2 cloves
- Sugar: 1 tablespoon
- Salt: to taste
- Vegetable oil: 30 ml

Place strips of bacon on the same baking sheet and send it to an oven preheated to 180 degrees for 40 minutes.
- Bacon: 300 g

Separate the pumpkin flesh from the skin and blend until pureed.

Chop the bacon into pieces of 3–5 mm. Set aside some chopped bacon for serving, and mix the rest with pumpkin puree. Taste the puree, add salt and pepper if needed. Add cinnamon.

Roll out a portion of the dough and cut circles using a special cutter or a regular glass.

Place a spoonful of pumpkin filling on the dough circle and tightly seal the edges, trying not to leave air inside the dumpling. Place the finished dumplings on a floured surface.

Boil water in a large pot and add salt. Immerse the dumplings, wait for them to float, and then cook for about 5 minutes.

- Salt: to taste

Place the ready dumplings with pumpkin on plates and sprinkle with bacon. Serve with sour cream or yogurt.
