Wash the chicken fillet and cut it into small pieces, pound to a thickness of about 3 mm. On a board, mix flour, salt, pepper, and 1 tablespoon of chopped tarragon. Then coat the chicken pieces in this mixture.
- Chicken fillet: 750 g
- Wheat flour: 3 tablespoons
- Salt: to taste
- Ground black pepper: to taste
- Tarragon leaves: 8 pieces

Chop the shallots. Heat 1 tablespoon of oil in a pan over medium heat. Add the mushrooms and shallots to the pan and sauté uncovered, stirring, for 12-15 minutes until all the liquid evaporates. Transfer the mixture to a bowl.

- Olive oil: 2 tablespoons
- Fresh mushrooms: 450 g

Heat the remaining oil in the same pan. Place the chicken pieces in the pan and fry for about 4 minutes on each side until golden brown.

Pour broth and white wine into the pan where the chicken was fried, add mushrooms with onions and the remaining tarragon. Bring to a boil and let it simmer for 1 minute. Place the chicken on a serving dish and drizzle with the mushroom sauce. Garnish with chopped tarragon.
