Beef stewed in bread

Recipe from the beer bar Schnitzel (Tver). To make this dish the way chef Viktor Rozhkov intended, you need, firstly, to find good meat, ideally marbled beef, and secondly, do not skimp on spices - the recipe uses ginger, barberry, garlic, rosemary and black pepper. Finally, for serving, choose round artisan wheat bread with a thick crust. The recipe is taken from the book "Geography to Taste with Nika Ganich. Gastronomic Guides.

Cut the beef diaphragm, remove all sinews and slice into pieces about 4 cm. Sear the beef, season with a little salt and pepper, transfer to a pot and cover with water 2 cm above the meat. Bring to a boil and skim off the foam. Add grated ginger, sliced garlic, a sprig of rosemary, salt, sugar, and barberry. Simmer covered on low heat for 1 hour.

Cut the onion into strips, the carrot into half rings, and the mushrooms into slices. Combine everything and lightly fry in oil.

When the meat is almost ready, add the sautéed vegetables and mushrooms and simmer for another 20 minutes until the meat is fully cooked. Season to taste with spices.

Before serving, add thawed green peas, orange segments, cream, and heat everything.

Cut off the top of the bread and remove the inside; it will no longer be needed, but the cut-off top should be saved and used for serving. Dry the prepared bread in the oven at 180 degrees for 5 minutes until crispy. Ideally, the bread should be homemade, straight from the oven.

Serve as follows: place dried bread on a plate, fill it with braised beef with warmed vegetables and orange in cream, cover with the top of the bread, and garnish with cherry tomatoes.
