To make this dish the way chef Viktor Rozhkov intended, you need, firstly, to find good meat, ideally marbled beef, and secondly, do not skimp on spices - the recipe uses ginger, barberry, garlic, rosemary and black pepper.     Cut the beef diaphragm, remove all sinews and slice into pieces about 4 cm. Sear the beef, season with a little salt and pepper, transfer to a pot and cover with water 2 cm above the meat. Bring to a boil and skim off the foam. Add grated ginger, sliced garlic, a sprig of rosemary, salt, sugar, and barberry. Simmer covered on low heat for 1 hour.

    Cut the onion into strips, the carrot into half rings, and the mushrooms into slices. Combine everything and lightly fry in oil.

    Cut off the top of the bread and remove the inside; it will no longer be needed, but the cut-off top should be saved and used for serving. Dry the prepared bread in the oven at 180 degrees for 5 minutes until crispy. Ideally, the bread should be homemade, straight from the oven.
