Chicken baked in the oven

Prepare a salt solution. Mix water with salt at a ratio of 50 g per 1 liter of water, add sugar, thyme, 2 heads of garlic (cut in half), green pepper (coarsely chopped), and the zest of 1 lemon, season with pepper, bring to a boil and cool.
- Water: 2 l
- Salt: 100 g
- Sugar: 120 g
- Thyme: to taste
- Garlic: 2 heads
- Green pepper: 2 pieces
- Lemon zest: to taste

Submerge the whole chicken in the solution and leave it in the fridge for 4 hours.
- Chicken: 1.5 kg

Take out the chicken and dry it with paper towels.

Tie the chicken with threads or twine to press the wings against the body and cross the legs. Place the chicken in the refrigerator to dry for 8 hours.

Place a lemon inside the chicken. Prepare a side dish, which can be any vegetables. Cut them and place in a tray. Put the chicken on top.
- Lemon: 1 piece

Pour vegetable oil over the chicken and rub it well into the body.
- Vegetable oil: 150 ml

Place the chicken in an oven preheated to 180 degrees for 40 minutes. Then increase the temperature to 200 degrees. After 10 minutes, brush the chicken with melted butter and leave it in the oven for another 10 minutes.
