Sauté the onion and mushrooms in a pan with a little oil for 5 minutes.
- Onion: 1 head
- Mushrooms: 50 g
- Grape seed oil: to taste

Add chopped tomatoes and simmer over medium heat until the liquid from the tomatoes has completely evaporated.
- Cherry tomatoes: 5 piece

Mix flour, salt, a little lemon juice, and water and stir well until a homogeneous mixture is obtained.
- Chickpea flour: 4 tablespoons
- Salt: to taste
- Lemon: 0.3 piece
- Water: 200 ml

Pour the sauce over the mushrooms and tomatoes. Mix all the ingredients and cook the frittata in a pan with a closed lid on low heat for 5-10 minutes.
