Wash the tail fat and cut it along with the meat into small pieces. To make the meat cook faster, place it and the pieces of fat in a preheated pot. Cover the pot and let the meat stew in its own juice for 1 hour.

Clean and chop the onion, wash and chop the greens, mash the garlic with salt.
- Onion: 3 heads
- Coriander: 4 sprigs
- Dill: 4 sprigs
- Red Basil: 5 sprig
- Garlic: 4 cloves

Place a pan on the fire and add meat fat to it, then add chopped onion and sauté. Add tomato paste, mix with the onion and simmer for 5-7 minutes.
