Murmansk cod with melted sour cream

Prepare the sauce: reduce the milk by half, then add sour cream, salt, thyme leaves, and a bit of lemon zest. Bring to a sauce consistency.
- Baked milk: 60 ml
- Sour cream 30%: 30 g
- Sea salt: 2 g
- Thyme: 2 g

Heat the pre-prepared vegetables in the sauce: cut the baked potatoes into nice wedges. Blanch the tomatoes and cut them as well. Finely chop the garlic shoots and heat them in the sauce, but they can also be blanched beforehand.
- Potato: 30 g
- Tomatoes: 50 g
- Garlic shoots: 25 g

Prepare the cod fillet and dry it.
- Cod fillet: 150 g

Fry on the skin side for 7 minutes, then place in the oven for 5 minutes without removing from the pan and without flipping to the other side. The cod should be fried only on one side.

After frying, pat the steak with a towel to remove excess fat.

Place the vegetable sauce in the center of the plate and carefully lay the cod on top, garnishing with a sprig of chervil.
