Beef with plums

Plums are responsible for the fresh sweet and sour taste here, and also help the meat achieve the desired softness. A festive dish that is included in our selection "Menu for an Anniversary.

First, cut each onion into quarters, then separate the quarters into individual petals.

Fry the beef brisket on both sides in vegetable oil and place it in a deep baking dish.
- Beef brisket: 2 kg
- Vegetable oil: 50 ml

Fry the onion in vegetable oil until it has a light caramel color and drops of tears on its petals.
- Onion: 1 kg
- Vegetable oil: 50 ml

Cover the beef with fried onions, season with ground pepper, salt, and a pinch of cumin. Surround with plums, seal the baking tray with foil, and place in an oven preheated to 160 degrees for about 3 hours.
- Onion: 1 kg
- Ground black pepper: to taste
- Salt: to taste
- Cumin (zira): to taste
- Plums: 1 kg

Check a couple of times to ensure there's liquid in the pan and the meat with onions doesn't burn. If something's wrong, you can splash in some wine — or you can splash it in without checking, it won't get worse.
