First, prepare the duck. Add salt and pepper to the duck legs and leave overnight. Transfer to a saucepan, add butter and chopped parsley, and simmer in its own juice for 3 hours. Cut the cooked duck meat into small pieces.

Prepare potato gnocchi. Boil potatoes in salted water, drain, add yolks and mash until smooth. Add flour, parmesan (50 g), knead the dough and refrigerate for an hour. Form small dumplings from the dough, place them in boiling salted water and cook.
