Kukyu is a tender and hearty dish of Azerbaijani cuisine that harmoniously combines aromatic spices, fresh herbs, and nutritious ingredients. The origins of the dish trace back to the traditions of Caucasian gastronomy, where baked egg mixtures with various additions symbolize the warmth of the home hearth. In this version, kukyu features juicy pieces of boiled lamb, soft potatoes, and fragrant onions combined with an egg mixture infused with dill and cilantro. Baked to a golden crust, it acquires a rich flavor with notes of greens and clarified butter. Kukyu can be served as a standalone dish or complemented with fresh vegetables and yogurt sauces, making it an ideal choice for a cozy family dinner or traditional feast.
