Sauce: heat a saucepan or pot, pour in olive oil, chop vegetables as desired, add to the pot and sauté everything except the tomatoes. Pour in broth. Blanch the tomatoes in boiling water and peel them, add to the other vegetables and simmer for 30 minutes. Then blend everything in a blender, strain through a sieve, adjust to taste (salt, pepper), sauce is ready!
- Olive oil: 20 ml

Garnish: clean the celery, cut into large long sticks, boil in broth, dry on a towel, and coat in starch. Pour oil into a saucepan, heat it up and fry the celery until golden brown.

Steak: soak the beans overnight. Drain the water, rinse with cold water and boil. Cook until fully done. Sauté the onion and cool it down, grind half of the beans with the onion, add the remaining beans and both flours, mix and season to taste. Shape and fry in a pan.

- Wheat flour: 10 g

Assemble the dish. Pour sauce at the bottom, place hot fried celery on the sauce, put the steak next to it, and sprinkle with fried onions. Done!
