Slice the beef against the grain into thin slices, then into strips.

Mix the meat with cilantro and 1 tablespoon of oil, and if time allows, refrigerate for about an hour.
- Chopped cilantro (coriander): 1 bunch

Cut ginger (5 cm) into thin strips and chop the garlic finely.

Heat a wok or large pan over high heat for 3-4 minutes. Reduce the heat to medium, pour in the oil, and swirl the pan to distribute the oil evenly. Add garlic as soon as it starts to change color (15 sec.), then increase the heat back to maximum and add the meat to the pan.
