Pass the meat through a meat grinder.

Soak white bread in milk for 5 minutes, squeeze it out, and pass it through a meat grinder.

Add eggs, a tablespoon of mayonnaise, finely chopped thyme, salt, pepper, and mix thoroughly.

Cut cold butter and 100 g of cheese into sticks, grate the remaining cheese.

With wet hands, shape a patty, make a dent in the middle, place a piece of cheese and butter in it, stack one on top of the other, and seal.

In a large skillet, heat olive oil and fry the patties for 3 minutes on each side.

Place the cutlets in a deep baking dish, pour in what remains in the pan, and add 100 ml of water.

Place a slice of tomato on top of the patties and sprinkle with grated cheese. Optionally drizzle with mayonnaise.
