Coffee "like Rafu" (Raf coffee)

Raf coffee is a delicate, airy drink with a rich creamy-vanilla aroma that appeared in Russia in the late 90s. Legend has it that a barista at a Moscow café created it specifically for a regular customer named Rafael, hence the name. This coffee is distinguished by its creamy texture thanks to whipped cream mixed with strong espresso and sweet vanilla. Its taste balances softness, sweetness, and a hint of coffee bitterness, creating a cozy and warming pleasure. Ideal for leisurely morning rituals or relaxing evenings. Serving this coffee doesn't require special additions—it is self-sufficient but can be adorned with a pinch of cinnamon or chocolate shavings to enhance the flavor depth. Raf is not just a drink; it's a warm hug in a cup.

First, prepare a portion of espresso. This can be done using a coffee machine or the old-fashioned way with a cezve (make sure it's stronger than usual coffee).
- Espresso: 50 ml

Then heat the cream well. This can be done in the microwave (at 800 watts for 1.5-2 minutes). This is necessary if you like hot coffee.
- Cream 10%: 100 ml

Mix cream with coffee and add ½ teaspoon of vanilla sugar (or vanilla + sugar). When using vanillin, be careful not to overdo it, or the drink will taste bitter. The vanilla flavor should be pronounced and nothing more.
- Espresso: 50 ml
- Vanilla sugar: 2 teaspoons

Next, vigorously whip the coffee+sugar+cream mixture using a whisk or cocktail blender, or a milk frother. Ta-da!!! It's all simpler: Raffa coffee is ready :)
