This yogurt is simply made: milk is heated, then mixed with a bacterial starter culture, and left to sit in warmth to develop its characteristic texture and flavor. We take from 1 to 3 liters of milk. Homemade or packaged milk needs to be boiled and cooled to a temperature of 38–40 degrees. Ultra-pasteurized milk (in Tetra Pak packaging) just needs to be heated to a temperature of 38–40 degrees.

Pour the starter into the milk and mix with a spoon.
- Bacterial starter: 1 g

Cover the pot with a lid and wrap it in a blanket to retain heat. If using a yogurt maker, follow the instructions.

Leave the milk in a warm place for 6-12 hours (check the exact time on the starter package).
