Homemade spiced pumpkin liqueur is the embodiment of autumn coziness and European traditions. This drink with a deep aroma of pumpkin, warm cinnamon, clove, and vanilla gives a sense of home warmth. The recipe's origins trace back to ancient European kitchens where pumpkin was not only an ingredient for pies but also for warming liqueurs. Its thick texture and rich flavor make it an ideal complement to desserts or a standalone gastronomic delight. The addition of rum gives the drink noble strength, while its aging enhances the harmony of flavor nuances. Homemade pumpkin liqueur can be served chilled, added to coffee or cocktails, and enjoyed neat on a cozy evening.

1
Pour water into a medium pot, add sugar, and bring to a boil over medium heat. Add pumpkin puree, cinnamon sticks, cloves, vanillin, and vanilla beans, whisk everything a bit, return to heat, and bring to a boil again.
- Water: 500 ml
- Sugar: 250 g
- Cane sugar: 250 g
- Pumpkin puree: 430 g
- Cinnamon: 6 pieces
- Carnation: 6 pieces
- Vanillin: pinch
2
Reduce the heat to a minimum and cook, stirring constantly, until the mixture acquires a rich aroma — about 30 minutes.
3
Meanwhile, we prepare everything for straining the pumpkin liqueur. For this, we take a piece of cheesecloth about 30x30 cm and cover the pot with it. We pour the liqueur mixture directly onto the cheesecloth and wait a bit for it to strain.
4
Carefully, using a rubber spatula, you can gently press on the pumpkin mass to release the remaining liquid. After that, the contents of the filter can be discarded. You should end up with about 2 cups of pumpkin liquid.
5
Finally, we add the rum and mix everything well again. We pour the liqueur into a liter jar or bottle and set it aside to cool to room temperature for about 1 hour.
- Rum: 2 glasss
6
Tightly close the bottle and store it in a cool, dark place for 2 days to 3 months.
