Pour sugar into a dry pan and place it on low heat. Cook until golden caramel forms. Add 0.75 cup of water and cook until the caramel melts (it should bubble).

In a metal bowl, mix the coffee and remaining sugar. Pour in the hot caramel and stir until smooth. Add vanilla and the remaining water.
