Jamie Oliver's Christmas Bishop's Punch

A bittersweet English classic that often appears in Dickens's novels. Unlike mulled wine, which is brewed in large cauldrons in public squares, punch is a home-made drink for large family gatherings and quiet country parties. What does the bishop have to do with it? It is believed that sweet communion wine has something to do with it. And then there's the orange - its peel is pierced with cloves and baked in the oven so that it gives up all its caramel-citrus spirit to the alcohol . It is also believed that a side effect of drinking such a punch can be a softening of the heart and an attack of sentimentality, especially if you share a glass with loved ones. Will you dare?

Stuff each orange and lemon with 8 cloves.
- Oranges: 4 pieces
- Lemon: 4 pieces
- Carnation: 20 g

Bake the fruits in a preheated oven at 180 degrees for 15 minutes until they start to caramelize.
- Oranges: 4 pieces

Meanwhile, peel the ginger and grate it on a coarse grater. In a pot, mix water with cinnamon, remaining cloves, pepper, and ginger, place it on the heat and warm it up without boiling.
- Fresh ginger: 10 g
- Water: 250 ml
- Cinnamon sticks: 1 piece
- Carnation: 20 g
- Allspice peas: 3 pieces

When it's almost boiling, pour in the wine and sherry, and grate 1/8 of a nutmeg.
- Red dry wine: 700 ml
- Sherry: 125 ml
- Nutmeg: 1 piece

When the mixture starts boiling again, add sugar. Cook on low heat for 5-10 minutes.
- Sugar: 150 g

Remove the clove from the prepared fruits with tweezers.
- Carnation: 20 g

Gently mash the fruits to release the essential oils and juice. Add the baked fruits to the pot and let it steep for at least 15 minutes.
- Oranges: 4 pieces
- Lemon: 4 pieces

Strain the drink through cheesecloth and pour into heatproof cups (or transfer to sterilized bottles and cool for later use).

Slice the remaining oranges into rounds and decorate the cups with them. Grate a little more nutmeg on top of the punch. Serve warm.
