Atlama is a refreshing drink from Azerbaijani cuisine, perfect for hot days. Its roots trace back to the traditions of Caucasian gastronomy, where dairy products play an important role in nutrition. Atlama combines the gentle tartness of kefir, the lightness of mineral water, and the freshness of cucumber, creating a harmonious balance of flavors. The addition of cilantro and green onions gives the drink a spicy kick and aromatic richness. This drink not only quenches thirst but also aids digestion due to the beneficial bacteria found in kefir. Pour kefir and mineral water into a suitable container, mix, and add salt.
- Kefir 3.2%: 1 l
- Mineral water: 500 ml
- Salt: to taste

Wash the cilantro (basil or dill can be used) well and chop finely. Wash the large cucumber and cut it into small pieces.
- Coriander: 0.5 bunch
- Cucumbers: 1 piece
