Magadan breakfast is a refined dish of Russian cuisine inspired by the northern regions of Russia. It combines tender cod, airy mashed potatoes with spinach, and a crispy egg ball. The steamed fish retains its natural flavor and texture, while the creamy puree adds softness to the dish. The egg undergoes complex thermal processing, becoming golden and crispy on the outside but remaining tender inside. Unagi sauce adds subtle notes of sweetness and depth of flavor. This dish is perfect for breakfast, allowing one to enjoy the harmony of textures and flavors.

Boil the egg in hot vinegar for 4 minutes.
- Chicken egg: 1 piece

Take out and place in ice. Cool down.

Place in cold vinegar and let sit for 5 minutes.

We dip in starch, then in beaten egg, and finally in breadcrumbs.

Fry for 1 minute until golden brown.

Boil potatoes in salted water, add butter, cream, salt. Make puree.
- Potato: 500 g
- Butter: 50 g
- Cream: 50 g
- Ground black pepper: to taste

Blanch the spinach in hot salted water, blend it, and add it to the puree. Mix everything together.
- Spinach: 80 g

Wash the cod, salt it, and steam for 15 minutes. Ideally, the temperature should be 60°C.
- Cod: 200 g

Place the puree on the plate, top with cod, unagi sauce, and an egg ball.
