Koulouri - classic Greek breakfast

Koulouri is a symbol of the morning Athenian rhythm, an aromatic bagel covered with golden sesame seeds. This recipe has roots in ancient Byzantium, where similar products were baked for travelers. Crispy on the outside and soft on the inside, koulouri is a perfect blend of tender dough with a light sweetness and nutty hint of sesame. It is great for breakfast and is often served with feta cheese, honey, or simply fresh coffee. Mix water, yeast, olive oil, sugar, and salt until a uniform mass.
- Water: 250 ml
- Dry yeast: 25 g
- Olive oil: 50 ml
- Sugar: 50 g
- Salt: 10 g

Sift the flour and add it to the mixture. Place in a large pot and mix.
- Wheat flour: 500 g

Then cut the dough into 50 g pieces and roll them out. Form bagels from the pieces.

Dip them in warm water, then in sesame. Leave for 15 minutes and bake for 10 minutes at 240 degrees.
