Yogurt pancakes are a delicate and airy dish of Russian cuisine, perfect for a cozy breakfast or light snack. The history of pancakes traces back to ancient Slavic culinary traditions where simple ingredients were transformed into aromatic treats. The addition of natural yogurt makes the batter especially soft and slightly tangy, giving them a unique flavor. These pancakes easily absorb any toppings – berries, honey, jam or sour cream, creating a harmony of tastes. They are quick to prepare: just mix the ingredients, let the batter rest for a bit, and then fry in a hot pan until golden brown. It's best to serve them hot, enjoying the crispy surface and tender texture inside.

1
Whisk together: eggs, sugar, and yogurt. Add flour and baking powder, mix until smooth (use less flour if using thicker Greek yogurt).

- Sugar: 50 g
- Natural yoghurt: 300 ml
- Wheat flour: 200 g
- Baking powder: 1 teaspoon
2
Place the bowl with the dough in a warm place for 10-15 minutes.
3
Heat the pan and brush it with vegetable oil using a silicone brush. Without stirring the prepared dough, scoop it with a spoon and place it in the pan, frying on both sides over medium heat without a lid.
