Fruit pancakes with honey

Fruit pancakes with honey are a true morning delight that combines the airy texture of American pancakes with the rich flavor of fruits and the aroma of floral honey. This recipe draws inspiration from classic pancakes but adds juiciness with apples, pears, and plums. Honey gives the dessert natural sweetness while cinnamon adds a warm spicy note. Thanks to the airy batter made from whipped egg whites, the pancakes remain light and tender, while butter makes them especially soft. These pancakes are perfect for breakfast or a light dessert, especially when served with berries, cream, or sour cream. They are not only delicious but also healthy due to the use of whole grain flour.

First the hardest part: wash, clean, and grate the fruits (squeeze the juice or leave it as compensation for part of the milk).
- Apple: 100 g
- Pears: 120 g
- Plums: 80 g

Separate the yolks from the whites (set the latter aside in the fridge) and mix with honey and cinnamon. Gradually pour in the milk.
- Chicken egg: 2 pieces
- Flower honey: 1 tablespoon
- Ground cinnamon: pinch
- Milk: 150 ml

Sift the flour and baking powder into the milk-yolk mixture step by step. Mix everything thoroughly.
- Whole grain flour: 120 g
- Baking powder: 1.5 teaspoon

Add fruit puree, a bit of melted butter, and mix again.
- Butter: 15 g

Whip the egg whites with a pinch of salt to a stiff foam and gently fold into the batter.
- Salt: pinch

Cook pancakes in a lightly greased pan (only at the beginning!) for a couple of minutes on each side. Serve the finished pancakes hot, with berries, cream, or sour cream.
