Cottage cheese pancakes with dried blueberries are a delightful dish of European cuisine that delights with its tenderness and rich flavor. The origins of these pancakes trace back to Slavic traditions where cottage cheese has long been the basis of many desserts. In this recipe, the classic texture of the pancakes is complemented by the sweetness of banana and vibrant berry notes of blueberries. This combination makes them soft inside with a light caramelized crust outside. The pre-soaked dried blueberries add a pleasant tartness and aroma of summer forests. These pancakes can be served with honey, yogurt, or fresh berries, turning them into an ideal breakfast or dessert. They are not only tasty but also healthy due to the cottage cheese and natural ingredients, making them an excellent choice for proper nutrition.

1
Mix two types of cottage cheese in a deep container.
- Cottage cheese: 100 g
- Soft low-fat cottage cheese: 100 g
2
Grate the banana on a coarse grater and mix it with cottage cheese.
- Banana puree: 50 g
3
Salt and sugar to taste.
- Wheat flour: 75 g
- Dried blueberries: 30 g
4
Wash the blueberries, pour boiling water over them, and let them sit for 10-15 minutes.
- Dried blueberries: 30 g
5
Add half a portion of flour to the mixture of cottage cheese and banana. The second half of the flour will be used for shaping the syrniki.
- Wheat flour: 75 g
6
To form syrniki, a cutting board is needed (it's easier to use either a very thin plastic one or, conversely, a massive plastic one).
7
Wood is inconvenient because the banana gradually absorbs the flour, which can dilute the consistency of the syrniki in the process), chef's knife.
8
Wash the blueberries, dry them, and add to the mixture. Mix thoroughly with a spoon or by hand. Sprinkle the cutting board with the remaining flour.
- Dried blueberries: 30 g
- Wheat flour: 75 g
9
Divide the cottage cheese mass into balls of the same size.
10
Each ball is rolled in flour, flattened, and a grid pattern is applied (with a knife) on each side. Thus, the knife is placed on the surface of the cheese pancake at an angle of 10-15 degrees horizontally, flattening the shape of the pancakes.
11
Add 75 grams of olive oil to the heated skillet.
- Olive oil: 50 ml
12
Place the cheese pancakes in the pan and fry until cooked.
