We sauté the onion in olive oil. I also add a bit of butter, as I find it tastier. The onion should cook on low heat to be soft and sweet, just like everything else you will add later.
- Olive oil: 3 tablespoons

Later we add sweet pepper, wait for everything to cook, then the tomatoes. Cut small or large as you like. When the juice turns orange, we add minced garlic. Salt can be added.

While this sits for a minute or two, mix the eggs with feta and ground pepper. If the cheese isn't salty enough, add some salt! Pour this mixture into the fragrant vegetables. And stir!

Once the eggs are ready, sprinkle a lot of greens on top! Since the name of this dish generally means 'mix', add whatever you love and mix it as you like! You can add zucchini or potatoes for extra heartiness.
