We beat the cottage cheese with eggs, add half of the kefir mixture. Add salt, sugar, and then pour in the flour.
- Cottage cheese: 200 g
- Chicken egg: 2 pieces
- Sour milk: 500 ml
- Salt: to taste
- Sugar: to taste
- Wheat flour: 300 g

Add baking soda to the remaining milk and mix well. Then combine it with the cottage cheese mixture. Whip everything well. The mixture reaches the consistency of thick sour cream.
- Sour milk: 500 ml

Next, prepare the filling to taste. The filling can be anything: mushrooms, liver, cabbage, jam, cottage cheese, chicken, everything should be cooked.

Pour a portion of the batter into a well-heated pan, reduce the heat, and cover with a lid. Once you notice the bottom of the pancake is browning, carefully add the filling (closer to the center) and fold the pancake in half with a spatula.

The dough is pliable and easily rolls up. We cover the pan with a lid for 1 minute, then flip the pancake and cover it again.
