Airy syrniki are a delicate, light treat originating from Russian cuisine. They feature a unique texture achieved through whipped egg whites and careful mixing of ingredients. The taste balances soft cottage cheese, sweetness of sugar, and raisins with subtle hints of vanilla or cinnamon. Fried to a golden crust, they have an appetizing crispy shell hiding an airy filling. Perfect for breakfast or cozy tea time.

Pass the cottage cheese through a sieve (it must be dry, otherwise the syrniki won't turn out). Soak the raisins in warm water (never in boiling water). Separate the eggs into whites and yolks. Whisk the yolks with sugar. Whisk the whites separately until frothy.
- Dry cottage cheese: 300 g
- Raisin: 100 g
- Chicken egg: 2 pieces
- Sugar: 3 tablespoons

First, add raisins (previously dried with a paper towel) to the cottage cheese and mix. Then add the whipped yolk with sugar and mix until smooth. Finally, add the whipped egg white and gently mix. Also, add a pinch of vanilla or cinnamon. All ingredients should be mixed in turn and gently to avoid disrupting the airy consistency!!!
- Raisin: 100 g
- Chicken egg: 2 pieces
- Sugar: 3 tablespoons
- Vanilla: to taste

When your 'cheese dough' is ready, shape the syrniki, generously coating them in flour.
- Wheat flour: 1 glass

Fry the cheese pancakes in a hot pan with oil (must be hot) for 2 minutes on each side.
