Brezol is a refined dish of European cuisine that captivates with its tender texture and rich flavor. The name comes from the French 'brésolé', meaning 'fried', which fully reflects the essence of its preparation. Brezol is a thin layer of minced meat covered with an egg shell, fried to a golden crust. The result is a hearty, juicy, and aromatic dish that can be served as an independent treat or with various fillings—from mushrooms to vegetables. The uniqueness of brezol lies in its versatility: it suits festive tables while also being an excellent option for a quick dinner. The tenderness of the minced meat, the subtle taste of spices, and the crispy egg crust make brezol one of the favorite recipes for those who appreciate simple yet sophisticated dishes.

1
Chop the onion into small cubes or blend it in a blender.
- Onion: 1 head

2
Mix the minced meat, adding onion, as well as pepper and salt to taste.
- Onion: 1 head
- Ground black pepper: to taste
- Salt: to taste

3
Add one raw egg to the mixture. Divide into 4 equal parts.
- Chicken egg: 5 piece
- Ground meat: 200 g

4
Crack one egg into a bowl, lightly beat it. Pour onto a flat plate.
- Chicken egg: 5 piece

5
Roll out one part of the minced meat thinly on a floured board, matching the diameter of the pan where the brizol will be cooked. Tip! You can also roll the minced meat between plastic wrap — this way it doesn't stick to the rolling pin and is easier to transfer to the plate.
- Ground meat: 200 g

6
Heat a couple of tablespoons of vegetable oil in a pan.
- Vegetable oil: to taste

7
Transfer the meat pie to a plate with an egg, placing it carefully on top. Then gently slide everything from the plate onto a hot skillet so that the egg is at the bottom and the meat is on top.
- Chicken egg: 5 piece
- Ground meat: 200 g

8
After the egg base browns, flip the brizol and fry until cooked. Prepare the other brizols in the same way.
- Chicken egg: 5 piece

9
Tear the leaves from the parsley sprig and chop them.
- Parsley: to taste

10
Serve folded in half and sprinkled with greens. You can put filling inside the brizol, such as sautéed mushrooms or vegetables.
