Cottage cheese pancakes with creamy filling and berries are a delightful dessert of Russian cuisine, combining a tender cottage cheese base with aromatic berry freshness. The history of pancakes goes back centuries when cottage cheese was the foundation of many Russian dishes. These pancakes are unique because they have a creamy cottage cheese filling inside, making them even richer and juicier. The slight tartness of fresh berries adds balance to the dessert and highlights its creamy flavor. They can be served hot or slightly chilled, enjoying their tenderness. A wonderful option for breakfast or a cozy tea time with loved ones!

We prepare the dough for the base — beat the egg with sugar and vanilla sugar, add cottage cheese and mix well. Add flour and semolina, achieving a thickness so that the syrniki do not spread. Shape 4 patties, place them on a baking sheet lined with parchment paper. Make indentations for the filling.
