Carrot syrniki baked in the oven is a cozy dish of Ukrainian cuisine that combines the tenderness of cottage cheese with the light sweetness of carrots. These airy syrniki have a soft texture, a golden crust, and a subtle aroma of vanilla or zest if these components are added. Historically, syrniki are a classic Slavic treat, but adding carrots gives them extra juiciness and lightness. They are perfect for a healthy breakfast or snack. Baked in the oven, they are less fatty than fried counterparts and pair excellently with sour cream, honey, or berry sauce. Each piece is infused with the warmth of home cooking, reminiscent of childhood and cozy family mornings.

Preheat the oven to 200 degrees.

Place parchment paper on a baking sheet and grease it well with vegetable oil. Mix cottage cheese (good! 5% fat) with finely grated carrot (can be chopped in a food processor), add eggs and 2-3 tablespoons of flour (I prefer good breadcrumbs, oat or buckwheat flour), salt, and sugar. Possible additions - zest, vanilla, raisins, candied fruits, poppy seeds.
- Soft cottage cheese: 1 kg
- Carrot: 2 pieces
- Chicken egg: 2 pieces
- Oat flour: 3 tablespoons
- Salt: to taste
- Sugar: to taste

Knead the cottage cheese thoroughly, shape into syrniki, and place them on a baking sheet.

Bake until golden for 20 minutes in convection, 30-40 minutes in a regular oven.
