Apple pancakes with vanilla are a cozy and aromatic dish of Russian cuisine, perfect for a family breakfast or warm tea gatherings. Historically, such pancakes were made in villages using seasonal apples and simple available ingredients. Tender and airy, they have a sweet taste with a slight tartness from the apples, while vanilla adds a subtle, exquisite aroma. They can be served with honey, sour cream, or berry jam, creating a unique flavor ensemble. The pancakes are easy to prepare and fry quickly, making them ideal for those who want to make something delicious without extra hassle. They are especially good in cooler weather when you want to warm yourself with homey aromas and flavors.

1
We wash the apples. We peel them (although if not very tough, we can leave the skin) and grate them on a coarse grater or in a blender.
- Apple: 3 pieces
2
We mix apples with sugar and eggs.
- Sugar: 3 tablespoons
- Chicken egg: 2 pieces
3
Add vanilla and baking soda with flour. Flour should be added gradually, bringing the dough to the consistency of thick sour cream.
- Vanillin: pinch
- Soda: pinch
- Wheat flour: 1 glass
4
Heat the pan, but not too much. The pancakes should not burn and should cook well. Fry small pancakes in butter or vegetable oil (you can use a tablespoon to scoop the batter).
