Express syrniki are a simple and quick treat that originated from European cuisine and won the hearts of fans of delicate cottage cheese desserts. Their roots trace back to traditional Russian syrniki, but here the cooking process is maximally accelerated while preserving a rich flavor. Light and airy inside with a crispy golden crust outside, they have a pleasant sweetness slightly enhanced by vanilla aroma. Thanks to the simplicity of the recipe, they can be made for breakfast or as a quick snack. They pair perfectly with sour cream, honey, or berry jam, turning an ordinary morning into a small gastronomic celebration.

Beat the egg in a bowl until frothy.
- Chicken egg: 1 piece

In another bowl, mix the mashed curd brick with sugar and salt.
- Dry cottage cheese: 180 g
- Salt: pinch
- Vanilla sugar: 2 teaspoons

Add the eggs to the cottage cheese mixture.

Knead a thick dough, gradually adding flour by the tablespoon. The dough becomes grainy and firm.
- Wheat flour: 100 g

Divide the dough into 7 equal parts.

Form cheese flatbreads from balls, gently pressing each ball on both sides.

Place the cheese pancakes in a frying pan with vegetable oil.
- Vegetable oil: 1 tablespoon

Fry the cheese pancakes on both sides until a golden crust forms (on a gas stove in an IKEA thin aluminum pan, it takes me 4 minutes in total).

Place the cheese pancakes on a plate. It's best served with sour cream or honey.
