Kyukyu with greens

Kukyu with greens is a traditional Azerbaijani dish resembling a fluffy omelet rich in fresh herbs. We clean the greens, wash them well, and chop them finely.
- Spinach: 1 bunch
- Parsley: 1 bunch
- Dill: 1 bunch
- Green onions: 1 bunch

Beat the eggs and mix them with herbs.
- Chicken egg: 6 pieces

Add salt and pepper to taste.
- Melted butter: 2 tablespoons
- Greek yogurt: 3 tablespoons
- Parsley: 1 bunch
- Dill: 1 bunch
- Spinach: 1 bunch
- Green onions: 1 bunch

Put everything in the pan and fry in melted butter with the lid closed so the top also gets browned. If you add a little wheat flour to the mixture (like for an omelet), you can even flip the kyukyu like an omelet if the pan is of good quality and the kyukyu doesn't stick to the bottom and doesn't fall apart when flipping.

The ready kyuku can be served with Greek yogurt, sour cream, or even without anything.
