Place the cottage cheese in a large bowl, add the eggs, scrape the vanilla seeds from the pod with a knife, add a few drops of natural vanilla extract, sugar, grate the lemon zest, mix all the ingredients with a fork, add flour, and knead the dough. The dough should have the consistency of thick sour cream: it should not be too stiff or too runny.
- Cottage cheese: 400 g
- Chicken egg: 2 pieces
- Vanilla pod: 1 piece
- Vanilla extract: 1 ml
- Sugar: 4 tablespoons
- Lemon zest: 1 teaspoon
- Wheat flour: 250 g

Sprinkle a small amount of flour on the table. Use a dessert spoon to take some dough, roll it in flour, and form a ball. Continue rolling until the dough no longer sticks to your hands. The essence of this technique is that there is much more flour on the surface than in the dough itself. When baking, the delicate dough will increase in volume by about one and a half times, and the flour crust will help form a structure that holds the delicate texture inside. Place the shaneshki on baking paper and transfer to the baking tray.
