Pour milk into a saucepan and place it over medium heat. Add a pinch of salt, ground nutmeg, 1 clove, a cinnamon stick, and orange zest. Bring the milk to a boil, stir in the oats, and cook over medium heat, stirring, for about 7-8 minutes until thickened. Remove from heat, discard the cinnamon stick and orange zest. Stir in maple syrup, dried cranberries, and light raisins. Cover and let sit for a couple of minutes.

- Carnation: 1 piece
- Cinnamon sticks: 1 piece
- Orange zest: 1 teaspoon
- Hercules: 120 g
- Maple syrup: 2 tablespoons
- Dried cranberries: 1.5 tablespoon
- Light raisins: 1.5 tablespoon

Preheat the grill.

Place the porridge in large ramekins (the biggest you have). Sprinkle the surface of the porridge generously with sugar, then place under a very hot grill for 2-3 minutes until the sugar caramelizes. Serve immediately, sprinkled with pecans to taste.
