Cut the cherries in half and remove the pits.

Heat a cast iron skillet. Mix cherry, orange juice, brandy, and brown sugar on the heated surface. Cook over medium heat, stirring occasionally, until the cherries soften and the syrup thickens for about 10-12 minutes. Remove from heat and cool to room temperature.

Heat a heavy-bottomed pot and add butter. Heat the butter and gradually pour in the semolina. Fry the semolina, stirring constantly, until golden brown for about 5 minutes. Do not overcook the semolina, or it will taste bitter.

Grease the fireproof molds with butter. Evenly spread the cherry jam on the bottom of the molds.
