Cut the vanilla pod in half. Use the sharp edge of a knife to scrape out the black vanilla seeds from the pod. Set aside.

Peel the peach and remove the pit. Cut into wedges. Place the wedges in a plate, sprinkle with sugar, and mix. Set aside until use.

Combine milk and cream in a saucepan, add vanilla seeds and the pod. Place the saucepan over medium heat and bring to a boil. Stir. Add the oats. Add peach slices and all the juice that has been released. Cook, stirring, over medium heat until thickened, about 7 minutes. Remove from heat and let sit covered for a couple of minutes.
