Peel the apple, remove the seeds. Cut into large pieces. Place raisins, walnuts, and chopped apples in a heatproof saucepan. Add 3 tablespoons of brown sugar, a cinnamon stick, nutmeg, cloves, 1 tablespoon of brandy, and 2 tablespoons of water. Put the saucepan over medium heat and simmer for 30 minutes, stirring occasionally. At the end of cooking, all the liquid should evaporate, and the syrup should thicken. After the time is up, remove from heat.

In another saucepan, combine milk, 2 tablespoons of sugar, ground ginger, and a cinnamon stick from the prepared jam. Place the saucepan over medium heat and heat until boiling. Add the oats and cook for about 5 minutes until thickened, stirring. Remove from heat. Divide the porridge into plates and top with stewed apple filling. Serve immediately.
