Criminal Pancakes

First, separate the egg whites from the yolks (2 eggs) correctly and carefully. At home, we like to do it with our hands. Of course, we need to wash our hands well, but this method is always a winner for us.
- Chicken egg: 2 pieces

Mix the yolks with salt, then pour in room temperature milk and sunflower oil.
- Salt: to taste
- Milk: 200 ml
- Sunflower oil: 15 ml

Mix the flour with the baking powder and gently incorporate it into the milk-egg mixture. Stir until a cream-like texture is achieved.
- Wheat flour: 200 g
- Baking powder: 10 g

Sprinkle the egg whites with sugar (50 g) and whip until stiff peaks form! It's better to use a mixer for the right texture, but you can also use a whisk - it will be a workout for your arm muscles.
- Sugar: 75 g

Next comes the most interesting and important part: carefully fold the whipped egg whites into the milk-flour mixture with a spoon, gently incorporating them into the batter with wide, airy movements from bottom to top. This way, the whites won't break and will add the maximum number of bubbles to the batter! Then cover the batter with a towel and let it rest for 30 minutes at room temperature.

Fry pancakes on a dry hot skillet. Check that the skillet is properly heated: you can drop a drop of water, and it should evaporate. Be careful! We are frying large pancakes, about 2 tablespoons of batter, resulting in a circle with a diameter of 13-14 cm. Fry the pancakes with love until golden brown.

Melt sugar (25 g) in a thick-bottomed saucepan over medium heat, stirring constantly. First, ensure the crystals are fully dissolved, then wait for the caramel to reach a golden-brown color.
- Sugar: 75 g

Add 10 grams of butter to the hot caramel and gently mix until smooth.
- Butter: 125 g

Carefully pour it onto parchment and let it cool at room temperature.

After completely cooling, crush the caramel by tapping it with a spoon or a thick knife.

Beat room temperature butter with a mixer, add bourbon and caramel crumbs.
- Butter: 125 g
- Bourbon: 13 ml

Shape the butter into a log, wrap it in plastic wrap, and place it in the refrigerator. This butter can be stored in the freezer and thawed gradually for making criminal pancakes.

To fry a good sunny-side-up egg, take any pan, heat it, add a piece of butter, and start frying the eggs over medium heat. It's better not to cover it with a lid to prevent the yolk from cooking. Sprinkle salt and pepper to taste. Fry 2 eggs at a time for one serving of pancakes.
- Butter: 125 g

Fry the bacon until crispy.
- Bacon: 100 g

On the pancakes (2 pieces per serving), add a fried egg, bacon, and most importantly — a piece of bourbon butter and maple syrup!
