Oatmeal pancakes with chicken and bell pepper

Cut the chicken, onion, and red pepper into small cubes.
- Chicken fillet: 1 piece
- Onion: 1 head

Fry the onion and pepper in a small amount of vegetable oil until soft, then add the chicken breast and fry for another 5-7 minutes.

The amount of milk may be slightly more depending on the absorbency of the dry ingredients. Also, the longer the dough sits, the denser and thicker it will become as the oat flour swells. Therefore, if the dough has rested a bit, it can always be diluted with additional milk.
- Milk: 330 ml
- Oat flour: 200 g

Mix flour, eggs, melted butter, salt, and milk, then blend everything until smooth to avoid lumps.

Fry the pancakes on both sides (you can lightly grease the pan with oil before the first pancake).

Place filling on each pancake, sprinkle with cheese, and fold into a triangle.
- Grated cheese: 150 g

Serve warm, and you can also heat the pancakes on a skillet on both sides before serving.
