Put chopped green onions in a pan and sauté until soft. Add chopped herbs and cook until slightly wilted.
- Green onions: 1 bunch
- Watercress: 1 bunch
- Arugula: 1 bunch
- Spinach: 1 bunch

Beat the eggs with salt, pepper, and grated Parmesan. Pour into the pan. Cook over medium heat until the bottom is set.
