The perfect scramble is a refined French dish that embodies tenderness and an airy texture. Its roots delve deep into France's gastronomic history, where chefs aimed to create eggs that maintain a creamy structure without excessive dryness. The flavor of the scramble is soft and creamy with a delicate aroma of melted butter. Its preparation is characterized by speed: the process takes just a few minutes but requires attentiveness and skill. Cooking over high heat and constant stirring creates light, silky pieces. It pairs harmoniously with crispy toast and aromatic coffee, making it ideal for a morning meal or light snack. Scramble can be enhanced with fresh herbs or ground pepper for added zest. This is an example of a simple yet sophisticated dish capable of turning an ordinary morning into a gastronomic delight.

1
Crack the eggs into a bowl, add salt.
- Chicken egg: 2 pieces
- Salt: to taste

2
Place a non-stick pan on the heat and melt a piece of butter in it. You can pick it up with a fork and move it around the pan to spread the butter better.
- Butter: 15 g

3
Thoroughly whisk the eggs with a fork. There's no need to achieve a fluffy foam; the eggs should be mixed, not beaten, to combine the yolk and white into a uniform mass. This should be done when the pan is already on the heat. The less time the egg mixture sits before frying, the more tender the scramble will be.

4
Pour the egg mixture into the pan. Fry the eggs over high heat: wait 5 seconds until the mixture starts to set, then gently move it with a spatula, drawing an eight shape. This creates a scramble with small pieces of egg. If you prefer larger chunks, start working with the spatula a bit later when the mixture is almost fully set.
- Chicken egg: 2 pieces

5
Scramble is prepared very quickly - literally in a minute or a little more. Just remember to work with a spatula and catch the moment when the mixture is still moist but not raw.

6
After turning off the heat, leave the eggs in the cooling pan for a few more seconds. The residual heat from the pan will finish cooking the egg mixture without overcooking it and will keep it creamy. When serving, you can sprinkle the scramble with chopped herbs. Scramble pairs well with strong coffee and crispy wheat toast.
- Green: to taste
