A classic fluffy omelette, the character of which is given by fragrant shavings of fresh truffle. Recipe from the Moscow restaurant Sartoria Lamberti.

Separate the whites from the yolks and beat well.

Add yolks to the whipped egg whites and mix.

Pour the egg mixture into a skillet heated with olive oil. Add salt and sprinkle with pepper.
