The word "syrniki" is Ukrainian, and originally syrniki were called "tvorozhniki" - after the Russian name of the original product. The secret of delicious syrniki is in the cottage cheese: it must be fresh, without sourness.

Prepare all the ingredients. You must use dry and crumbly cottage cheese; soft won't work. The higher the fat percentage, the tastier the syrniki will be.
- Cottage cheese: 500 g

Mash the cottage cheese with a fork.

Mix with egg, sugar, and vanillin.
- Chicken egg: 1 piece
- Sugar: 100 g
- Vanillin: 1 g

Then add 90 g of flour and mix.
- Wheat flour: 150 g

The cheese mass should not be too dry or too wet. With wet hands, take a bit of the mass and roll it into a ball, then press the ball with your palms to give the cheese pancake a flat shape.

Coat the formed cheese pancakes in flour.

Heat oil in a pan and fry the cheese pancakes on medium heat, first on one side until golden brown.
- Vegetable oil: 50 ml

Then flip it and fry until golden brown.

Place the ready syrniki on paper towels to get rid of excess fat.
