Peel the avocado, remove the pit, and cut it into 4 wedges. Fry in a pan with vegetable oil.

Sear the steak on both sides over high heat, then finish cooking in the oven (time will depend on the thickness of the meat). It's better to take two thinner steaks for quicker cooking.

Finely chop the onion and sauté in butter until golden brown, add the chopped tomato, and after 1-2 minutes add the lecho and heat. Make three 'nests', crack eggs into them, season with salt and pepper, and cook on low heat.
