Bulgarian peppers in oil for winter with garlic is a traditional recipe of Bulgarian cuisine that combines the rich taste of sweet peppers with the aromas of garlic and spicy spices. Baked until soft, peeled from skin and seeds, the peppers are infused with oil mixed with Italian herbs and fragrant pepper, creating a rich, spicy bouquet of flavors. The addition of balsamic vinegar gives the dish a subtle tanginess while sterilization allows it to retain freshness throughout winter. This delicacy is perfect as an independent snack, a side dish for meat and vegetable dishes or as a base for sauces and salads. Bulgarian peppers in oil capture the taste of sun and summer in a glass jar that warms winter evenings while awakening memories of warm days and southern aromas.

1
First, the peppers need to be roasted whole. Wash them and wipe with a paper towel. Line a baking tray with parchment paper to avoid staining from the juices released during roasting, and place the peppers on it. Roast at a standard temperature of 180 degrees (you can turn on convection mode) until lightly charred. During roasting, turn the peppers a couple of times. Place the cooked vegetables in a pot and cover with a lid.
